Eat Local: Tracy's Coffee Cafe
Tracy and Jodi Meilinger serve up home-style breakfast and lunch, seven days a week.
Tracy’s Café, a little place on College Hill in Easton, is a cozy coffee shop that is reminiscent of a diner. Tracy’s serves breakfast items that include pancakes, French toast, eggs and omelets. Lunchtime sees club sandwiches, burgers, homemade soups and more.
The most popular dishes are their eponymous omelets; Tracy’s Favorite includes tomato, onions, peppers and cheese, while Jodi’s Omelet contains sausage, peppers, onions and cheese. Their fresh fruit pancakes, available seasonally, are also a favorite.
The Sampler combo is a breakfast feast of eggs, French toast, pancakes, bacon and sausage, and rings up under seven dollars. Their hash browns are a family specialty, being an original recipe from the owner’s and manager’s father.

The café is owned by Tracy Meilinger, and managed by her sister, Jodi Meilinger. It has been an Easton establishment since its opening 16 years ago.
Jodi Meilinger explains how the café came into being. “Back in ’95, Tracy drove out to visit me in California, and stopped at all these little places along the way… when she got back, she decided she wanted to open a coffee shop.”

The restaurant business was new to the both of them, but months later Tracy’s Coffee Café was open. When Jodi returned to Pennsylvania, she became the manager of the shop.
Clientele at Tracy’s is varied and includes Lafayette students, professors and the dean. People that live on the Hill and school athletes are regulars.
“This season, we get a lot of the lacrosse players,” Jodi Meilinger quips. “And they have very healthy appetites.”
Which makes Tracy’s an attractive option; there aren’t many diners close by or restaurants that serve similar food for students or residents of College Hill. The prices are competitive with any area diner or luncheonette, with most items coming in around four to six dollars.
Tracy’s Café is located on the corner of Cattell and Monroe Streets in Easton, and offers eat-in or take-out options. It is a cash-only establishment and is open seven days a week, until 1:30pm and opens early for breakfast.
