Mesa Brings "Modern Mexican" to Easton

Owners of Bethlehem's Tapas on Main open new restaurant in downtown Easton.

The name on the sign says "Mesa," and under that, the words "Modern Mexican."

Both of those words are equally important.

That's because the owners of Mesa -- downtown Easton's newest restaurant -- want diners to think differently about Mexican food.

"Everything's very light," said Juan Carlos Paredes. "Sometimes, the conception of Mexican food is that it's delicious, very flavorful, but also heavy."

Mesa, which opened late last month, replaces the former Mex-Tex Trio, which closed last year.

On the menu you'll find things like Mahi Mahi tacos, lobster quesadillas, roasted red pepper soup and vegetarian empanadas. There's also several varieties of guacamoles -- prepared tableside, and an extensive cocktail menu.

Paredes and chef/co-owner Rafael Palomino -- who also own Tapas on Main in Bethlehem -- have revamped the interior of the restaurant, adding a bar, accordion-style doors that can open for outdoor dining in the warmer months, and a private "tequila room" that will -- eventually -- offer 140 varities of tequila.
