Combative Arts Institute Opening in Forks

A grand opening and ribbon cutting will take place for the Combative Arts Institute in the Park Plaza at Sullivan Trail Friday night.

There's a new business opening up in Forks Township and it might not need much of a kick start. The Combative Arts Institute will get the grand reception from the Business and Commerce Association of Forks Township and the Greater Lehigh Valley Chamber of Commerce Friday night. Located in the Park Plaza at Sullivan Trail, the Combative Arts Institute will hold a grand opening and ribbon cutting ceremony starting from 6 p.m. to 9 p.m. A special seminar with the legendary Royce Gracie begins at 7 p.m. Gracie is the first UFC Champion and Brazilian Jiu Jitsu legend. GymtiME Expands at Park Plaza

Forks business takes over site next store in Park Plaza at Sullivan Trail.

It didn't take long for Meghan Ibach to experience growing pains. After opening her business in the Park Plaza at Sullivan Trail at the end of September, the owner of GymtiME is already expanding. Ibach has taken over the empty space to the left of GymtiME, creating more space for the business which bills itself as "sports, recreation and fitness for a lifetime." "Things are going really well," Ibach said. "We have exceeded what we wanted. I had realistic hopes." Ibach—who had just finished a class in which children bounced basketballs, blew bubbles and did other exercises—said she was thrilled with winter session enrollment. She said that it hovered around 90 percent and that 125 kids were enrolled in the fall session. Now, it's at 150. …

BounceU Launches College Scholarship Program

The winner of the inaugural BounceU scholarship will be announced in early May.

BounceU is giving away scholarships. The indoor recreation center business—which has a location in the Park Plaza at Sullivan Trail in Forks Township—has announced a college scholarship program called "The Places You'll Go," owner Mike Principato said in a press release. The new program will award a $500 scholarship every year to a deserving high school senior who is employed at BounceU's Allentown, Bethlehem and Forks Township locations. "One of the great joys of owning this business is seeing the positive impact a part-time job has on a teenager, and a scholarship opportunity like this one is just another way to help them along their life's journey," Principato said. Juicy Subs Now Open at Park Plaza

The Park Plaza at Sullivan Trail welcomed its first eatery when Juicy Subs opened Monday.

The first eatery at the Park Plaza at Sullivan Trail in Forks Township is now open. Juicy Subs opened its doors at 8 a.m. Monday with several shout-outs on its Facebook page to let people know that the new business was officially open for business. "We are all excited and can't wait to see everyone of you," one post exclaimed. The business was supposed to open March 1, but some equipment issues delayed the opening until Monday. Juicy Subs said on its Facebook page that it was thrilled to receive an order for 12 breakfast sandwiches from Jasmine sushi, which is located across the street in the plaza featuring Big Woody's. Palmer bike path, a new eatery in Forks Township and an incident at a Palmer bar also among top headlines in Palmer and Forks townships.

The week that was had a little bit of everything. In Palmer Township, officials said the bike path was closed until further notice. A man was allegedly duped in a computer crime while another allegedly punched his wife in a bar. For Forks, a new sub shop is slated to open in Park Plaza at Sullivan Trail. And crime took off during the month of November, according to police reports. The "I Heart Boobies" case found its way back to court. And we all learned a new word this week: Sequester. Fight took place at Bar-Don Lanes in Palmer Township, police said. November figures in Forks Township near double of October, but police chief says he's not alarmed. Juicy Subs Opening at Park Plaza

Juicy Subs is expected to be the first eatery opening at the Park Plaza at Sullivan Trail in Forks Township.

It's carving a place in Forks Township history. Juicy Subs will be the first eatery in the Park Plaza at Sullivan Trail when it opens, which was first expected to take place Friday, but owners said is now delayed until March 11. "We feel very honored," co-owner Vlad Tayman said. "We're the sub shop and we're going to provide a lot of growth for the township." Tayman and co-owner Eletise Maldonado, who are both Forks Township residents, were driving around one day last June when they wondered about all the construction going on at the former Laneco Department Store site. "This looks like a mall," Tayman told Maldonado. The two work for T-Mobile and Maldonado's family had operated a string of grocery stores, where Maldonado made sandwiches …

New Forks Township center starting to transform into what will become a shopping mecca.

It's a blustery late Wednesday morning. But that doesn't stop workers from their construction activity. In a handful of storefronts, work is steadily progressing as cables are installed, walls are stabilized, paint is splattered, saws buzz and nails are pounded. At the Park Plaza at Sullivan Trail, this work is now constant. The former Laneco department store is being transformed into Forks Township's shopping mecca and new businesses continue to sign on. Forks Zoning Officer Tim Weis has been busy of late, stamping permit approvals as businesses set up shop while others already are starting to expand. No more crappy food like subs, pizza, etc. There is a Panera Bread iand Chick Fil A in Palmer and P'burg. We need a better eatery I.e., Macaroni Grill, Red Lobster, Cheesecake Factory, etc. It seems we are always driving to Allentown or Bridgewater to find these type of restaurants. Forks is a upscale neighborhood and deserves upscale restaurants.   more ›

Park Plaza Looks Ahead

Some new developments for Park Plaza at Sullivan Trail.

There are some new developments at Park Plaza at Sullivan Trail. Before the recent Forks Township Board of Supervisors meeting, Zoning Officer Tim Weis offered an update on the new retail mecca located in the heart of Forks Township. He said that GymTime, which opened in the fall, will be expanding its operations. Weis also said that plans are in the works for "an old-fashioned pharmacy." Also on the docket is a hoagie shop which Weis said he has received a permit application for. Park Plaza at Sullivan Trail currently hosts a branch of Easton Hospital, GymTime, BounceU and a salon.
